Hello everybody !! How was your day? I wish a good day. And today I entered continental Menu Rotasi 1.4 that is Appatizer ( chicken Liver and Herb Pate Hollandaise sc) ,Soup (Clam Chowder), Main course (Spaghetti Bolognaise) ,and Dessert (Baked Custard Tart) (Broiche). And my group made a Spaghetti Bolognaise .
Next i prepared to all ingridient ,and first i boiled Brown stock and i Sauted Mirepoix for sauce Demiglaces dan my friend prepared for sauce bolognise that is meat clarification ,onion chopped,garlic crushed ,celery and so on. This is some the picture !
Finally i made the roux until brown and input to the brown stock ,then add mirepoix and sachet ,tomato paste . After that i made sauce bolognaise add sauce demiglaces .this is my prepared for today . and dont forget for helped others groups this is some the picture for others groups !!
