Day Report!
Then Chef dyno came and instructed us to start cooking our food for today's buffet service , which is indonesian buffet, so i took out the shrimp that i already prepared yesterday and i sousvided it on 45° C for 15 minutes until cooked and then mixed it with the spice mix that we already prepared yesterday by blending chili,shallot,galangal root and garlic. And next to made the otak-otak fish !! Like this !!
After finished with the shrimp and squid i then plated it inside a cocktail glass with banana leaf as the underliner and then garnished it with edible flower and sprinkle with dried coconut, after finished with the Dojang Nakeng i then took it and bring it to the office for presentation. After finished we then took a break for lunch and continue with general cleaning, after finished the general cleaning . Mr.faisal instructed us to clean the new pastry section and then instructed us to go home.
