Bakpia is a food made from a mixture of green beans with sugar, which is wrapped in flour, then baked. The term bakpia itself is derived from the Hokkien dialect, which is from the word "bak" which means meat and "pia" which means cake, which literally means bread containing meat. In some regions in Indonesia, foods that taste legit are known as pia or pia cake.

Bakpia is one of the popular foods from Chinese or Chinese families. One of the well-known Bakpia came from the Pathuk area (Pathok), Yogyakarta, so it was known as the Bakpia Pathuk. Considering that the majority of the people of Yogyakarta are Muslim, in its development, the contents of the bakpia which was originally pork meat was turned into green beans. Then the flavors of bakpia are developed into chocolate, cheese, green spices, and black spices.

In the village of Pathuk, the population used to be unfamiliar with the term "brand", so that the bakpia sold so far has been labeled "producer house number", for example numbers 75, 25, 531, 125, and so on.

Then came a number of Bakpia brands that were not from house numbers, such as Djava, Ayu, Vista, and others. The delicious and distinctive taste of bakpia makes this cake a favorite of tourists visiting Yogyakarta. Bakpia can be found at a bakpia shop or shop that sells souvenirs typical of Yogyakarta

There are more than 100 Bakpia brands. Among the bakpia that are often sought by buyers are Bakpia Kurniasari, Bakpia 145, Bakpia 75, Bakpia 25, Bakpia Merlino, Bakpia Djava, Snack It Pia 100 (usually sold at leading minimarkets), and Bakpia Kencana. Each brand has unique characteristics.

One of the most widely produced bakpia by bakpia craftsmen due to high consumer demand is bakpia mung beans. The main raw materials in making green bean bakpia are green beans, flour, palm oil, butter, water, granulated sugar, vanilla and salt. According to Purwono and Hartono (2008) green beans are a source of vegetable protein, vitamins (A, B1, C and E), as well as several other substances that are very beneficial to the human body, such as starch, iron, sulfur, calcium, fatty oils, manganese, magnesium, and niacin. When viewed from the protein content, green beans, including food sources of a second protein after skim milk.

Wheat flour is often called wheat flour. Wheat is the basic ingredient in making flour. Until now there were no other ingredients as a substitute for wheat to make flour, because wheat is the only type of grain that contains gluten. Gluten is a protein that is not soluble in water, has elastic properties like rubber, and is a good framework as a basis for making bread, cakes, and others. The function of the flour is as a framework in the manufacture of pastries, texture formation, and crispness of the dough.

Water is a very important material for human life and is an important component in food because water can affect the appearance, texture, and taste of food. In addition, water functions as a dispersing agent for various compounds in food and functions as a solvent (Winarno, 2004). According to Rahzarni (2009), water serves as a solvent for sugar, salt and other ingredients until it is distributed evenly. Water also works to strengthen gluten, and regulate the thickness of the dough. sugar also functions as a preservative because it has hygroscopic properties. Its ability to absorb water content in food can extend shelf life (Saparinto and Hidayati, 2006). According to Rahzarni (2009), sugar in addition to food also functions as a flavor enhancer and as a preservative in food.

Vanilla is a food plant which produces vanilla powder which is usually used as food fragrance. Vanilla powder is a vanilla plant product that actually comes from crushed vanilla bean. The goal is to easily mix it directly as raw material for cakes or drinks according to the size of the existing recipe. The other main ingredient is salt. According to Rahzarni (2009), salt serves as a flavor enhancer, preserves the texture of the product produced, helps in controlling the dough, arouse the aroma and the formation of gluten. Kitchen salt is hygroscopic so that it can draw water out of the tissue. Salt is also able to arouse the taste of food. Hope it is useful buddy. Wassalam
